When I just started blogging, I was going through a phase where I used to love creating healthier versions of traditionally unhealthy food.
And I created these brownies which are free of gluten and refined sugar during that time and have been making them ever since.
It’s true that not all healthier alternatives turn out to be tasty alternatives but these brownies are delicious in their own way.
If you enjoy the flavour of coconut in sweets, then I have a strong feeling you will love this one too.
I have applied a Chocolate peanut butter topping on these brownies and all I can say is that these are an absolute guilt-free delight!

minutesIngredients
1/3 cup dark chocolate chips/chunks
1/2 cup coconut oil
1/2 cup honey
3 large eggs
1 tsp vanilla extract
1/4 cup cacao/cocoa powder
1/2 tsp salt
1 cup finely desiccated coconut or ½ cup coconut flour
1/3 cup chopped raw walnuts or pecans
- for Peanut Butter Topping (optional)
4 tbsp melted nut butter of choice ( I used chunky peanut butter)
2 tbsp honey
2 tbsp cacao powder
1 tbsp melted coconut oil (if needed)
Directions
- In a double boiler or microwave, melt the chocolate chips and coconut oil.
- Once melted stir along with honey, leave it for 10 mins to let it cool down. Meanwhile turn the Oven on to 180oC and line a 5-inch square pan with a parchment paper.
- Once the chocolate mixture has cooled down add in the eggs, vanilla extract, cacao powder, salt and coconut flour and mix them until well incorporated together.
- Add in the Chopped walnuts or Pecans and mix evenly.
- Pour the batter to the square pan and let it bake for about 20-25 mins.
- You can eat it just as it is or you can add a topping like I did.
- For the Topping– In a mixing bowl, add in the peanut butter, honey and cacao powder and mix together, you can stir in the coconut oil if you find your topping more on the thicker side.
- Spread the topping on the baked brownie, cut it into squares and Enjoy
Notes
- If you have desiccated coconut which is not very fine, It will be best to give it a pulse in a grinder and get it slightly powdered before adding it to the batter. This will ensure a better brownie texture.
