A very simple yoghurt based salad, with a few greens and hard-boiled eggs, this is one of my favourite recipes using avocadoes.
I found this idea via Pinterest a couple years back and whenever I have a box of ripe avocadoes at home, this is my go-to lunch or breakfast meal to prepare.
Rich in healthy fats, this salad is nutritious, creamy and delicious in taste. It works perfect as a filling in sandwiches or eaten along with any bread of choice.
You can assemble this within minutes, so it’s a quick side dish/ meal you can make at any time.

2 medium avocado, peeled and pitted
5 hard boiled eggs, peeled and chopped
5 Tbsp Greek yoghurt
Juice of half a lime
1/2 cup lettuce, finely chopped
1 Tbsp cilantro, minced
Salt and pepper, to taste
Directions
- Using a fork, mash the avocadoes in a bowl. A few lumps here and there is okay.
- Add in the greek yoghurt, lime juice and mix them together with a spoon.
- Add lettuce, cilantro, eggs and mix them together along with salt and pepper according to your taste.
- Your salad is now ready, serve it as it is or stuff them into a sandwich.
