Chilled summer drinks like this Lotus Biscoff Dalgona are one of my favourite parts of the summer months.
These drinks certainly have kept us cooler in the extreme heat, here in the gulf . I wanted to get a little creative, and this combination was most certainly enjoyed by my family and friends.
It’s creamy and rich, with the right amount of Dalgona and Lotus Biscoff flavours. Seriously, they are delicious on another level, just too good!
On another note, you may or may not be wondering why I haven’t posted in the last two months. Either way, let me explain why.
Well for one, I had the flu which didn’t go for weeks at stretch, and having ample rest was essential. When I finally got better, I went on holiday to my hometown in India, along with my husband.
For me, the last few months have been a rollercoaster of different, new personal experiences. Me and my husband celebrated our one year anniversary. It’s crazy that it’s already been a whole year.
We also went honeymooning at a beautiful hillstation in India which I might write about very soon.
So it is true, I did spend a month away from the heat to enjoy the Indian monsoons. However, I am back in Dubai, and it most certainly is still quite the weather, where you need Iced drinks to get through the day.
When the Dalgona trend started back in the 2020 lockdowns, it was a regular thing at our home. We made dalgona coffee daily, somedays warm, somedays cold, depending on our mood.
Experimenting with different combinations, I came up with this recipe that is made with Lotus Biscoff Spread or Biscoff Topping. I also use icecream to give it a richer, creamier texture and it tastes absolutely fantastic.

RECIPE for Iced Biscoff Dalgona:
Iced Lotus Biscoff Dalgona Coffee

- Dalgona Coffee Topping
2 Tbsp instant coffee powder
2-3 Tbsp white granulated sugar
2 Tbsp water
- Biscoff Milkshake
3 scoops Vanilla or Biscoff Icecream
2 cups cold milk
4 Tbsp melted biscoff spread or topping
Directions
- Start by whipping the Dalgona topping with the coffee powder, sugar and water together in a small-medium sized cup or bowl. Mix it using a hand blender or whisk for a good couple of minutes until it form firm peaks. Set aside.
- In a juicer or regular blender, add the icecream, cold milk and biscoff spread. Turn the machine on low speed and then move it to a higher speed until it is all well blended.
- Divide the drink into 2-4 glasses, leaving a little space on top for the dalgona topping. Top it off with the Dalgona. If you want to, you can decorate the cups with more melted Biscoff cream, biscoff biscuits and/or crumbs. Enjoy!
